Feast Timeline: a holiday dinner plan, thaw to table

Tell us when you sit down, how big the bird is and what goes on the table. We work backwards to the day it leaves the freezer and keep every oven slot free of temperature clashes.

How the plan is worked out

    1. Sit down is time zero. Hot dishes leave the oven 10 minutes earlier so there is time to serve.
    2. The bird rests, then roasts. The rest comes off the end, then the roasting time before it, based on the weight and the usual published times for each cut.
    3. Sides fill the gaps. Each dish gets the latest slot that fits. Dishes share an oven only when their temperatures are within 36°F (20°C) and the racks have room. Otherwise they get a gap of 10 minutes, a second oven or a day-before bake with a warm-through.
    4. Prep goes while the bird roasts. Same-day prep is packed into the hours when the bird is in the oven and you are free.
    5. Thawing sets the first date. The plan counts back from the oven to the day the bird leaves the freezer.

    Food-safety numbers, in plain words

    • Poultry and any stuffing must reach 165°F (74°C) in the thickest part, checked in more than one spot.
    • Whole roasts of beef, pork and lamb reach 145°F (63°C), then rest at least 3 minutes. A fully cooked ham is reheated to 140°F (60°C).
    • Thawing happens in the fridge or in cold water, never on the counter.
    • Hot food stays above 140°F (60°C) and cold food at 40°F (4°C) or below. Put leftovers in the fridge within 2 hours and warm them to 165°F (74°C) before eating.

    Common questions

How long does a turkey take to thaw in the fridge?

About 24 hours for every 4 to 5 pounds (1.8 to 2.3 kg) at 40°F (4°C) or colder. The planner uses 4 pounds a day, rounded up to whole days, and adds a day in hand. A 12 pound turkey starts on the Saturday before a Thursday dinner.

How long does a cold-water thaw take?

About 30 minutes for every pound (roughly an hour per kilogram). Keep the bird in a leak-proof bag, fully under cold tap water, change the water every 30 minutes and cook it straight after.

What temperature must the turkey reach?

165°F (74°C) in the thickest part of the thigh and the breast, away from the bone. Stuffing cooked inside the bird must reach the same temperature. Whole roasts of beef, pork or lamb need 145°F (63°C) and at least 3 minutes of rest.

How do two dishes share one oven?

If their temperatures are within about 36°F (20°C) of each other and the racks have room, they go in together. If they are further apart, the planner leaves a gap of 10 minutes between them, moves one to a second oven, or bakes it the day before and warms it through on the day.

Why does the bird rest before carving?

Resting lets the juices settle so the meat carves cleanly, and it frees the oven for the sides. The planner rests a turkey for 30 minutes by default, and you can change that from 15 to 60 minutes.
